⚠️ THIS IS A PRE-ORDER
4–6 week wait. Each knife is built to order, one at a time, by hand in Anna Bay, NSW. Your knife enters our queue the day you order.
In stock knives drop every Thursday 7pm and sell quickly, but a pre-order lets you lock in the build — we make them in small batches once a month.
The Santoku is the all-rounder of the kitchen — a flat, tall blade that handles vegetables, fish and meat without you reaching for anything else. The 185mm edge gives you a full stroke on the board while the height keeps your knuckles clear.
The blade is 52100 carbon steel forge-welded between stainless cladding with nickel shims — San Mai construction, etched to show the layers. 52100 is a bearing steel: it takes a screaming edge and holds it, and the stainless outer layers keep the maintenance honest.
The handle is a Wa-style hidden tang: dyed, stabilised birch up front with a natural deer antler ferrule. Colour in the timber, character in the antler, and no two the same.
A note on colour
Dyed birch is stabilised and dyed by hand, so the colour on yours will differ from the photos. Tell us your preferred colour in the order notes and we'll get as close as the rack allows.
A note on antler
Deer antler is a natural material. Every handle is its own shape, colour and texture, so yours will not be identical to the photos — that's the point.
