⚠️ THIS IS A PRE-ORDER
4–6 week wait. Each knife is built to order, one at a time, by hand in Anna Bay, NSW. Your knife enters our queue the day you order.
In stock knives drop every Thursday 7pm and sell quickly, but a pre-order lets you lock in the build — we make them in small batches once a month.
The Gyuto is the Japanese chef's knife — a long, gently curved blade that rocks through herbs, slices protein cleanly and push-cuts through vegetables without wedging. The 200mm edge is the size most home cooks settle on once they've tried everything else.
The blade is 52100 carbon steel forge-welded between stainless cladding with double nickel shims — San Mai construction, etched to show the layers. 52100 is a bearing steel: it takes a screaming edge and holds it.
The handle is a Wa-style hidden tang in snakewood with a black buffalo horn ferrule. Snakewood is one of the densest, most figured timbers going — the pattern is in the name — and the horn ferrule keeps it classic.
A note on timber and horn
Snakewood and buffalo horn are natural materials. Figure and colour vary piece to piece, so yours will not be identical to the photos.
