The Breaker is a carving and slicing knife built for the big jobs. 215mm of cutting edge and 350mm nose to tail, so the brisket coming off the smoker, the whole fish on the bench or the roast that is too big for anything else in the drawer comes apart in one long clean pull instead of six short ones.
It lives at the backyard BBQ as happily as it does on the boat. Carving, slicing, breaking down a big cut of meat or fish.
The blade is Böhler N690 stainless with a satin belt finish. It holds a working edge through a full cook, does not mind meat juice or salt water, and sharpens straight back up.
The handle runs stabilised Western myall into natural deer antler, with a copper and Restone inlay between them. Dark, dense Australian native timber up front, raw antler at the back, and a band of copper and stone through the middle.
A note on antler
Deer antler is a natural material. Every handle is its own shape, colour and texture, so yours will not be identical to the photos. That is the point.
