This Large Hybrid Boning–Fillet Knife is forged from stainless Damascus steel, featuring a high-performance core wrapped in beautifully layered Damascus cladding. It’s designed for those who need one knife that can handle everything — from breaking down larger fish to slicing with surgical precision.
With a 200 mm cutting edge and 330 mm overall length, this blade sits between a fillet and a boning knife: semi-stiff, strong through the spine, but still with enough give to glide cleanly under skin or along bone. It’s a true hybrid — the ideal all-rounder for both water and field work.
The handle is crafted from Australian Ironwood, stabilised for strength and moisture resistance while highlighting its deep golden grain and rich, earthy tone. Each handle is hand-shaped and polished right here in Anna Bay, giving every knife its own unique feel.
Comes with a custom Kydex sheath and optional free engraving.
