A sashimi knife is a long, narrow slicer built for fish. The length draws a cut through a fillet in one pull, so the slice comes away clean instead of torn. It is just as happy on a roast or anything else that wants a long, thin, single pass.
The blade is coppermascus san mai: a 1084 carbon steel core clad in copper and nickel, etched so the copper lifts against the steel. The pattern varies piece to piece, so no two are ever the same.
Carbon steel. This is not a stainless blade. Wipe it dry after use and give it a coat of wax before it goes away, and it will build a patina and last a lifetime.
The handle runs natural deer antler into polished buffalo horn. Raw antler through the grip, black horn at the blade end, against the copper in the steel.
A note on antler
Deer antler is a natural material. Every handle is its own shape, colour and texture, so yours will not be identical to the photos. That is the point.
