The Japanese take on the chef's knife, thin, precise and fast on the board. The blade is a 52100 carbon core with bright nickel shim lines, a san mai built to take and hold a razor edge. The handle is a traditional Japanese Wa style in carbon fibre, light, tough and grippy.
