The Flexxy Fillet is built for precision and durability on the water. Forged from 12C27 Swedish stainless steel, it’s razor-sharp, corrosion-resistant, and perfectly balanced between flex and strength. With a 180 mm cutting edge and 295 mm overall length, it’s a very flexible knife that glides cleanly through fish for effortless skinning and filleting.

This handle is crafted from dyed and stabilised Cheese Burl, one of Australia’s most stunning native timbers. Stabilising strengthens the burl and makes it highly water-resistant, while the dye brings out the wild, swirling grain patterns that make each handle one-of-a-kind.

Every knife is handmade in Anna Bay, shaped and polished individually for a perfect in-hand feel. Comes with a custom Kydex sheath and optional free engraving.
